8 slices white bread
2 Tbs butter
½ carrot, finely diced and steamed
½ cup peas, steamed
125g tin corn, drained
2 cups BBQ chicken, shredded
½ cup bechamel sauce
1 Tbs fresh thyme leaves
Sea salt and freshly cracked pepper
1 tsp dried chilli flakes, (optional)
Spread butter over both sides of the bread
In a medium bowl add carrot, peas, corn, chicken, bechamel sauce, thyme, season and chilli flakes.
Spoon mixture between four pieces of butter bread, placing the bread on top
Preheat Sunbeam Big Fill Toastie maker, place 2 sandwiches inside and close lid
The light READY will come on, open lid and serve.
Repeat with the remaining two sandwiches.
