Avocado & Bacon Toast

Quick and easy for a lazy breakfast

  • 2 ripe avocados, halved, deseeded, peeled
  • 2 tablespoons lime juice
  • ¼ teaspoon cracked black pepper
  • 200g bacon rashers
  • 8 slices sourdough bread, toasted
  • 2 cloves garlic
  • 2 tablespoons olive oil
  • Flat leaf parsley, optional
  • Salt and pepper, to taste


  1. In a small bowl combine avocado, lime juice and black pepper. Mash with the back of a fork until chunky. Set aside.
  2. Heat a large frypan over medium-high heat. Add beacon and cook for 3-4 minutes on each side or until golden. Rub the sourdough with garlic and drizzle with olive oil.
  3. Spread avocado over the toast and top with bacon and a few sprigs of parsley. Season to taste with salt and pepper. Serve.
