Spiced Potato Skins

  • 10 (160g each) desiree or red rascal potatoes, unpeeled
  • olive oil cooking spray
  • 2 teaspoons lemon pepper spice blend
  • sour cream & sweet chilli sauce, to serve


  1. Pierce the potatoes all over with a fork. Microwave on High/100[%] for 12-14 minutes until just tender when tested with a skewer. Set aside for 15 minutes or until cool enough to handle.
  2. Preheat barbecue flat plate on high.
  3. Cut the potatoes into quarters lengthways. Use a teaspoon to remove the potato flesh, leaving ½cm flesh still on the skin. Place potato skins onto tray, skin side down. Spray with oil and sprinkle with half the lemon pepper. Turn potato skins over and repeat with oil and seasoning.
  4. Reduce burners to medium heat. Place the potatoes, skin side down onto the plate. Close the barbecue hood and barbecue for 12-15 minutes or until golden and crisp.
  5. Serve with sour cream and sweet chilli sauce.
