Herb Crumbed Schnitzel

A great meal for the whole family

3 slices mixed grain bread 1 slice = ¾ cup 2 ½ cups 1/3 cup flat-leaf parsley 1 tablespoon roughly chopped chives 1 tablespoon thyme leaves 2 garlic cloves, halved ¼ cup finely grated parmesan cheese Salt and freshly ground black pepper 4 thin veal schnitzels 1/3 cup flour 2 eggs, lightly beaten 2 tablespoon milk Vegetable oil, for cooking


Using a food processer fitted with the processing blade, process bread until crumbs are formed. Transfer to a large bowl. Add parsley, chives, thyme, garlic. Process on speed 3 until finely chopped. Add breadcrumbs and cheese. Process until combined. Season with salt and pepper. Place flour in a bowl. Whisk egg and milk together in a bowl. Coat veal lightly in flour. Dip in egg mixture. Lightly coat in breadcrumbs. Heat oil in a large fry pan over medium-high heat. Cook veal in batches for 2-3 minutes each side or until golden and cooked through. Serve veal with crispy potatoes and mixed salad.
