A tasty way to pack some greens into your day

1 zucchini, finely sliced lengthways

50g baby spinach

½ avocado, sliced

2 - 4 slices cheddar cheese

3 Tbs pesto

4 slices of wholegrain bread


1. Preheat grill for 3 - 4 mins. Spray oil, cook zucchini, until soft. Set aside.

2. Add spinach and cook for 1 – 2 minutes until wilted, set aside. 

3. Place bread on hotplate, add avocado, spinach, cheese, zucchini, and pesto, top with wholegrain bread. Close lid and cook for 4 -5 minutes until golden brown.
