Flourless Chocolate Cake

A great afternoon treat

  • 125g butter, chopped coarsely
  • 250g dark chocolate, chopped coarsely
  • 5 eggs, separated
  • 230g caster sugar
  • 250g ground almond meal
  • Chocolate Ganache
  • 125ml cream
  • 250g dark chocolate, chopped coarsely


  1. Preheat oven 180°c fan forced. Grease and line 22cm round cake pan with baking paper.
  2. Place butter and chocolate in medium heatproof bowl, over medium saucepan of simmering water, cook, stirring, until combined; cool slightly.
  3. Meanwhile, whisk yolks and sugar in small bowl with an electric mixer until thick and creamy. Transfer to a large bowl with chocolate mixture and almond meal, stirring until combined.
  4. Whisk egg whites in large bowl of an electric mixer until soft peaks form. Using metal spoon gently fold egg whites into chocolate mixture, in two batches, until combined.
  5. Pour cake batter into prepared cake pan. Bake in oven about 1 hour and 30 minutes or until cooked through. Stand cake in pan 5 minutes before turning onto wire rack to cool.
  6. Combine cream and chocolate in small saucepan, stirring, until combined, cover refrigerate until set. Spread chocolate ganache over cake.
