1 Tbs olive oil
1 red onion, finely chopped
1 garlic, finely grated
260g chargrilled red capsicums from a jar, chopped
400g tin diced tomatoes
1 tsp chilli powder (optional)
1 tsp sweet paprika
½ tsp oregano
60g feta cheese, crumbled
6 eggs
Garnish with fresh oregano leaves and chopped avocado
Toast, to serve


1. Turn skillet on medium, add oil and pre heat

2. Sauté onion for about 3 mins, add garlic and cook for 1 min

3. Add capsicum, tomatoes and herbs and cook for about 5 mins

4. Scatter feta and make six holes

5. Crack eggs into the holes and cook for about 20 – 30 mins on low, until eggs are set

6. Garnish with oregano leaves and avocado. Serve with toast
