You will need:

  • 3 medium zucchini, grated (about 5 cups)
  • 2 large eggs, lightly beaten
  • ½ cup shredded cheddar
  • ½ cup grated Romano
  • 1 tsp dried oregano
  • 1 tsp dried thyme
  • 2 garlic cloves, crushed
  • sea salt
  • Freshly ground black pepper
  • Tomato Sauce, for serving

Let's make it:

Step 1:

Place zucchini in a kitchen towel and squeeze all excess liquid out.

Step 2:

Line the air flow racks with baking paper.

Step 3:

In a large bowl mix together zucchini, egg, cheddar, Romano, oregano, thyme, garlic, salt, and pepper.

Step 4:

Spoon about 1 tablespoon of mixture and roll it into a gnocchi shape with your hands. Place on the baking sheet.

Step 5:

Select AIR FRY, TEMPERATURE 200°c and TIME 17 minutes. Half way through the cooking process, rotate all the racks. Serve with tomato sauce.
