You will need:
- 250g butter, softened
- 1 cup caster sugar
- 1 tsp vanilla extract
- 4 eggs, room temperature
- ⅓ cup milk
- 2 cups self raising flour, sifted
- ⅓ cup strawberry jam, warmed
- 200ml thickened cream
- Decorate with icing sugar, strawberries and mint.
Let's make it:
Step 1:
Preheat fan oven to 160°C. Grease and line with baking paper, two 20cm round spring form cake tins.
Step 2:
Place butter and sugar into mixing bowl and beat on medium speed until light and fluffy.
Step 3:
Reduce speed to low, add vanilla extract, eggs one at a time, alternate the milk and flour and beat until well combined.
Step 4:
Divide mixture in between cake pans. Bake for 30 minutes or until cooked. Allow to cool in pan, turn cakes out onto cooling rack to cool.
Step 5:
Meanwhile, add cream into a mixing bowl and beat on medium high for about 2 minutes until cream has thickened.
Step 6:
Place strawberry jam on top of one cake, adding whipped cream and place other cake on top.
Step 7:
Sift icing sugar over the top of the cake, add strawberries, mint and any extra thickened cream if desired.
