You will need:
- 1 zucchini (grated and drained of excess moisture)
- 2 tbsp plain flour
- 2 eggs
- 1 tsp baking powder
- 60g feta cheese (crumbled)
- 125 corn kernels (drained)
- 1 sprig spring onion (sliced)
- Salt & Pepper to taste
Let's make it:
Step 1:
Whisk the eggs, flour and baking powder in a large bowl until smooth & combined.
Step 2:
Add the grated zucchini, feta, spring onion and a pinch of salt and pepper.
Step 3:
Mix to combine.
Step 4:
Using a spoon, scoop mixture out onto a tray lined with baking paper. You should make 4 fritters with the mixture.
Step 5:
Bake on ‘Air Fryer’ setting at 180°C for 10 minutes.
Sam's Top Tip:
Make sure you absorb excess moisture from the zucchini to ensure the fritters aren’t runny.
