You will need:

  • 1 Chicken breast fillet (cut into ‘nugget’ sized pieces)
  • 1 egg
  • ½ cup wholemeal flour
  • ⅔ cup panko bread crumbs
  • ⅓ cup grated parmesan cheese
  • 2 zucchinis (cut into ‘chip’ sized pieces)
  • Salt and pepper (to taste)

Let's make it:

Step 1:

Season chicken with salt and pepper.

Step 2:

In a small bowl, beat egg lightly.

Step 3:

Spread the flour out onto a plate. On another plate, spread the panko crumbs.

Step 4:

Dip the chicken pieces into the flour, then the egg and finally the panko crumbs.

Step 5:

Spread all coated chicken pieces out evenly on a tray lined with baking paper.

Step 6:

Repeat the process with the zucchini chips, laying them out on a separate tray lined withbaking paper.

Step 7:

Pop both trays in the Air Fryer and cook for 15 minutes at 180°C.

Sam's Top Tip:

Experiment with spices and seasoning to add extra flavour to your nuggets. I like to serve mine with homemade sweet chilli dipping sauce.
