You will need:

  • 1 cup self-raising flour
  • 2 small vegetable stock cubes, crumbled
  • 2 tablespoons finely shredded parmesan (optional)
  • 2 large eggs
  • ¼ cup milk
  • 1 large handful baby spinach leaves, chopped (you can leave them whole if you like!)
  • ½ cup frozen corn kernels (defrosted)
  • ½ cup frozen peas (defrosted)

Dipping sauce – mix together in a small bowl

  • 2 tablespoons mayonnaise
  • 2 tablespoons sweet chilli

Let's make it:

Step 1:

In a large mixing bowl, combine the flour, crumbled vegetable stock cubes and parmesan cheese (if using).

Step 2:

Add eggs, milk and stir to combine to form a thick batter.

Step 3:

Add baby spinach, corn and peas to the batter and stir until fully combined.

Step 4:

Spoon the fritter mixture into the bottom grill plate of the Sunbeam Big Fill Toastie for 4, evenly dividing the mixture to make 4 fritters.

Step 5:

Close the lid and cook until golden, 7-8 minutes. Serve with a green salad and the sweet chilli dipping sauce.

Cook's Tip:

To defrost your peas/corn, simply place them in a small bowl and cover with hot water. Allow to stand for 10-15 minutes, then drain.
