For this recipe, you'll need a Sunbeam Multi Zone Air Fryer Oven.

Ingredients:

  • 1 medium egg
  • 110g caster sugar
  • 110g clotted cream
  • 110g self raising flour
  • 1 tbsp milk
  • Zest of 1 lemon
  • Pinch of salt

For the topping 

  • Lemon Curd
  • 110g clotted cream
  • 20g icing sugar
  • Zest of 1 lemon
  • Cupcake decorations

Let's make it:

Step 1:

Remove the inner drawers and central divider from your Multi Zone Air Fryer. 

Step 2:

Place the large roasting tray on the bottom of the air fryer. Assemble your cup cake tray with the paper cases. 

Step 3:

Place the egg and sugar into your plastic measuring jug and beat on high, using an electric hand mixer until thick and pale, approx 2 minutes. 

Step 4:

Stir the clotted cream in its tub until it becomes runny. Add 110g of the clotted cream, to the sugar and egg and mix in gently. Stir in the flour, milk, lemon zest and salt. 

Step 5:

Divide between the paper liners. 

Step 6

Place the cup cake tray on the bottom roasting tray in the air fryer and cook on Bake for 25 minutes @160°C. No need to preheat. 

Step 7

Once cooked remove from the air fryer and set aside on a wire rack to cool. 

Step 8

Cut a small round disc into the top of each cupcake and remove, take away a little of the cake filling underneath. 

Step 9

Spoon into each cavity, 2 tsp lemon curd, then replace the cake disc so the cake looks complete once more. 

Step 10

Whip the clotted cream with the icing sugar until piping or spooning consistency, stir in the lemon zest. 

Step 11

Pipe swirls of the cream onto each cupcake and decorate with your chosen toppings.
