Warm up with this hearty lamb and bean stew made in the pressure multicooker. Tender lamb, tomatoes and potatoes come together in an easy winter meal.

You will need:

  • 3.5 kg boneless lamb leg, diced
  • 2 tbs olive oil
  • 1 pinch salt and black pepper
  • 1 brown onion, diced
  • 400 g tin crushed tomatoes
  • 1 tsp paprika
  • 1 tbs garlic, minced
  • 2 bay leaves
  • ½ tsp salt
  • ¼ tsp black pepper
  • ½ cup red wine
  • 400g tin cannelloni beans
  • 500g baby potatoes, whole or sliced in half
  • Fresh parsley for garnishing

Let's make it:

Step 1:

Season the lamb with salt and black pepper.

Step 2:

Press BROWN, START/STOP. Pre-heat add oil and pre heat, and brown lamb in batches and set aside.

Step 3:

Add onion, and sauté for 3 – 4 mins, add tomatoes, paprika, salt and pepper, garlic, bay leaves, salt, pepper, wine, potatoes and return lamb.

Step 4:

Secure the lid making sure the steam vent is in the ‘seal’ position Select MEAT function and adjust time to 1 hour. Press START/STOP.

Step 5:

Once the unit has finished cooking, allow the unit to have a natural pressure release time of 2 minutes.

Step 6:

Mix through beans and serve into bowls.

Step 7:

Garnish with fresh chopped parsley.
