You will need:

  • 500g white chocolate buttons
  • 125g copha, roughly chopped (vegetable shortening)
  • 2 cups rice cereal
  • 2 cups mixed nuts and dried fruit
  • ½ cup desiccated coconut

Let's make it:

Step 1:

Line a rectangular 27cm x 17cm brownie or slice tin with baking paper. Combine the white chocolate and chopped copha in the bowl of the Sunbeam Mixmaster® HeatSoft™ Planetary Mixer with the scraper paddle attached. Attach the HeatSplash™ guard to the bowl.

Step 2:

Turn on HeatSoft™ and select MELT. Mix on speed 2 to begin with, gradually increasing the speed to 5-7, over 7-8 minutes, to help break up the chocolate.

Step 3:

Add the remaining ingredients to the bowl. Mix on speed 2, until just combined for 30 seconds.

Step 4:

Transfer the chocolate fruit and nut mixture into the lined tin and chill for 30 minutes, or until set. Cut into squares to serve.

Cook's Tip:

The Sunbeam Mixmaster® HeatSoft™ Planetary Mixer MELT function auto-switches off at 6 minutes to ensure it has not been forgotten. For this recipe, simply press MELT again to continue melting this quantity of chocolate!
