For this recipe you'll need a Sunbeam SteamFry Air Fryer + Steam.

You will need:

  • 120g Peeled Prawns (weighed raw)
  • 15g Panko Breadcrumbs
  • 10g Fine Desiccated Coconut
  • 10g Fresh Mint
  • 40g Baby Spinach
  • 60g Mango
  • 40g Avocado
  • 15ml Light Sweet Chilli Sauce
  • 30ml Lime Juice

Let's make it:

Step 1:

Set the Sunbeam 4-in-1 Air Fryer + Oven to Air Fryer setting and heat to 180°C.

Step 2:

Place coconut and breadcrumbs in a bowl and stir to combine. Place egg white in another bowl. Dip prawns into egg white, then into coconut crumb. Place on the mesh tray and cook on the middle shelf of the Sunbeam Air Fryer mesh tray until golden.

Step 3:

To make the dressing, mix the sweet chilli sauce and lime juice.

Step 4:

Chop mango and avocado and add to a bowl with the baby spinach and mint. Top with the prawns and the dressing.
