You will need:

  • 490g plain flour
  • 55g caster sugar
  • 3 tsp yeast
  • pinch salt
  • 1 cup warm milk
  • Oil for frying

Chocolate glaze

  • 2 cups icing sugar, sifted
  • ½ cup cocoa, sifted
  • ¼ cup milk
  • 1 tsp vanilla extract
  • Sprinkles

Let's make it:

Step 1:

Place flour, sugar, yeast and salt into a large bowl. Using dough hooks, mix on low speed. Add milk and mix until dough comes together and elastic for about 4 mins.

Step 2:

Grease a large glass bowl with oil spray and place dough in bowl, cover with cling wrap and place in a dry warm place for 1 hour, until risen double the size.

Step 3:

Punch the dough and roll together forming a ball, using a rolling pin roll out on a lightly floured surface about 1 cm thick. Cut out circles using 8cm round cutters, then using a 2cm round cutter create holes in the middle of the circles. Set aside to rest for 20 mins.

Step 4:

In a large saucepan over high heat, add oil and heat to 170°C. Place doughnut dough in batches and cook 20 seconds each side. Drain on absorbent paper. Repeat until all cooked. Set aside to cool.

Step 5:

For the chocolate glaze, in a large bowl, add icing sugar, cocoa, milk and vanilla. Using whisk, mix on low speed until combined. Adding more milk if required.

Step 6:

Dunk cooled doughnuts into chocolate glaze and decorate with sprinkles.
