You will need:
- 2 chicken fillets
- ½ tbsp oil
- Salt and pepper
- 4 slices of smoked streaky bacon
- 1 cos, romaine or gem lettuce
- Parmesan shavings
For the croutons
- 100g ciabatta bread, roughly torn
- 1 small clove of garlic, roughly chopped
- 1 tbsp olive oil
For the dressing
- 2 small, tinned anchovies
- 1 small clove of garlic, finely chopped
- 1 tbsp white wine vinegar
- 4 tbsp mayonnaise
- 1 tbsp grated parmesan
- ground black pepper
Let's make it:
Step 1:
Make the croutons – place the torn ciabatta, garlic and olive oil into a bowl and mix well.
Step 2:
Tip these into your airfryer basket and cook on 200c for approx 5-6 minutes, shaking occasionally to encourage browning. Once cooked remove and set aside.
Step 3:
Brush both chicken fillets with the oil and season with the salt and pepper.
Step 4:
Tear a small piece of foil, add this to the airfryer basket and sit the chicken on top. Airfry at 180c for 15-20 minutes turning halfway through cooking. Once cooked loosely wrap the foil around the chicken and remove from the basket to rest.
Step 5:
Add the bacon slices to the airfryer basket and cook at 180c for 5-10 minutes until starting to crisp. Set aside to cool, then break into small pieces.
Step 6:
To make the dressing – add the anchovies, garlic and vinegar to a small food processor. Alternatively mash the anchovies with the back of a fork, mix with the chopped garlic and vinegar in a small bowl.
Step 7:
Add the mayonnaise, parmesan and some ground black pepper and mix well. The consistency should be similar to yoghurt so thin with a little water if necessary.
Step 8:
To assemble the salad, tear a few of the lettuce leaves and place these into your individual serving bowls. Arrange a few of the larger leaves around the outside. Add a few parmesan shavings.
Step 9:
Add a scattering of croutons and a spoonful of dressing, sprinkled with some of the bacon pieces.
Step 10:
Diagonally slice the chicken and place this on top.
Step 11:
Top with a few more croutons, bacon, parmesan shavings and the dressing before serving. Place the remaining dressing into a small pot and serve alongside.
