For this recipe, you'll need a Sunbeam Mini Snack Press & Grill and 4 sheets of baking parchment paper roughly 22cm x 18cm. 

You will need:

  • 50g self-raising flour
  • 1 tbsp caster sugar
  • 15g melted butter
  • 1 small/medium egg
  • 60ml milk
  • 150g pack blueberries

For serving – Golden syrup or honey & Greek yogurt


Let's make it:

Step 1:

Place the flour and sugar into a mixing bowl. 

Step 2:

Whisk in the melted butter, egg and milk to make a thick smooth batter. 

Step 3:

Gently fold in a handful of blueberries. 

Step 4:

Brush the plates with a little vegetable oil and pre-heat the Mini Snack Press & Grill. 

Step 5:

Spoon approx 1 tbsp batter to the centre of the bottom plate, close the lid and allow to cook. 

Step 6:

Check after approx 2 minutes and if there are small bubbles on the batter mix, gently flip, and cook for a further 2 minutes. 

Step 7:

Repeat with the remaining batter mix, covering the cooked pancakes with some foil to keep warm. 

Step 8:

Serve warm, in a stack drizzled with some syrup and topped with the remaining blueberries and a dollop of Greek yogurt.
