You will need:

  • 500 g beef mince
  • 1 onion, finely chopped
  • ½ tsp salt
  • 2 garlic cloves, finely chopped
  • 1 tsp minced ginger
  • 2 tsp curry powder
  • 1 package filo pastry
  • Oil spray

For the garlic yoghurt sauce

  • 1 tbsp olive oil
  • 2 garlic cloves, finely chopped
  • ¼ tsp salt
  • ½ cup thick yoghurt

Let's Make It:

Step 1:

Heat a drizzle of olive oil in a large frying pan over high heat. Add the beef mince, onion and salt. Cook, stirring, for 3-5 minutes, breaking up the mince with a wooden spoon. Reduce the heat to medium and add the garlic, ginger and curry powder and cook for a further 2-3 minutes, or until fragrant. Stir through a splash of water, then remove from the heat and allow to cool.

Step 2:

Cut filo pastry into 12 cm wide, 40 cm long strips. Spoon 1 heaped tablespoon of the cooled filling at the short end of the strip, then fold over to form a triangle. Continue folding all the way up the strip, maintaining the triangle shape to enclose the filling. Repeat until all samosas have been wrapped.

Step 3:

Place 6 samosas into the Sunbeam air fryer basket and spray with oil. Cook at 200˚C for 6 minutes, until golden and crisp. Remove to a serving plate and continue cooking the remaining samosas in batches until complete.

Step 4:

To make the garlic yoghurt sauce, heat the oil in a small frying pan and add the garlic. Cook for 1 minute, or until fragrant, then stir in the salt and yoghurt. Remove from the heat.

Step 5:

Serve the beef samosas with the garlic yoghurt sauce.
