Tender beef Massaman curry made with coconut milk, potatoes and fragrant curry paste. An easy meal perfect with jasmine rice.
You will need:
- 1 Tbs olive oil
- 1kg rump beef, cut into cubes
- 2 brown onion sliced
- 210g jar massaman curry paste
- 400ml coconut milk
- 2 Tbs fish sauce
- 2 Tbs brown sugar
- 2 Tbs tamarind puree
- 700g baby potatoes, cut in half
- Serve with jasmine rice and chopped peanuts
Let's make it:
Step 1:
Press SAUTÉ. Adjust time to 10 minutes and press START/STOP. Preheat. Add oil.
Step 2:
Pre heat. Add onion cook until soft, add beef and cook until brown. Add curry paste, coconut milk, fish sauce, brown sugar and potatoes.
Step 3:
Secure the lid and ensure the steam release valve is in the seal (closed) position. Press MEAT adjusting time to 15 minutes. Press START/STOP.
Step 4:
Once the Pressure Multicooker has finished cooking, allow a natural pressure release time of 5 minutes. Carefully release any pressure left inside before opening the lid.
Step 5:
Remove beef and potatoes.
Step 6:
Press SAUTÉ, then START/STOP, and allow to simmer for 2- 5 minutes, until sauce has thicken slightly and reduced. Pour over meat and potatoes.
Step 7:
Serve with jasmine rice, garnish with chopped peanuts.
