You will need:

  • 1 kg pork roast
  • 300g cannellini beans
  • 100g onions
  • 1 tbsp garlic
  • 400g tomatoes
  • 200ml white wine
  • 200g carrots
  • 100ml olive oil
  • Thyme and bay leaf to taste
  • 200ml chicken broth
  • ½ bunch basil

Let's make it:

Step 1:

Soak the cannellini beans in water overnight.

Step 2:

Brown the pork roast in olive oil in a medium fry pan over high heat. Once golden brown, add the diced onions and carrots, then the garlic (crushed only); before the vegetables are completely browned, deglaze with the white wine and reduce to half.

Step 3:

Add the diced tomatoes, beans (well-drained and rinsed), the thyme, bay leaves and add the broth just to cover the beans.

Step 4:

Let cook 6 hours on Low, and then check the seasoning.

Step 5:

Before serving, add the snipped basil.
