You will need:

  • 125g butter, softened
  • ¾ cup caster sugar
  • 2 eggs
  • 1½ cup SR flour, sifted
  • ½ cup milk
  • 1 tsp vanilla extract

Buttercream icing

  • 125g butter, softened
  • 1½ cups icing sugar, sifted
  • 1 tbs milk
  • Banana chips and caramel sauce to decorate

Let's make it:

Step 1:

Preheat fan oven to 160°C. Line a 12 hole cup cake pan with paper cases.

Step 2:

Place all cake ingredients into a bowl and mix on low speed until combined. Increase to medium speed and beat for 2 minutes until light and fluffy.

Step 3:

Divide mixture between paper cases and bake for 20 minutes or until golden brown.

Step 4:

For the icing, in a large bowl, add butter and beat on medium to high until butter is pale. Reduce speed to low and add icing sugar and vanilla extract. Beat until well combined.

Step 5:

When cakes are cool, pipe icing on top of each cake then decorate with banana chips and a drizzle of caramel sauce.
