Fresh Asian-inspired chicken salad with lime, ginger and chilli, tossed with crisp vegetables, herbs and peanuts. Light, zesty and perfect for warm-weather meals.

You will need:

  • 1 Tbs fish sauce
  • 1 Tbs apple cider vinegar
  • Juice and zest of 2 limes
  • 1 tsp brown sugar
  • 1 garlic clove, crushed
  • 3cm ginger, grated
  • 1 small chilli, deseeded and finely chopped
  • 2 Lebanese cucumbers, ribboned
  • 1 carrot, finely julienned
  • 1 red onion, finely sliced
  • ½ cup coriander leaves
  • ¼ cup mint leaves
  • 500g roast chicken, shredded
  • ¼ cup peanuts, toasted and coarsely chopped

Let's make it:

Step 1:

Prepare and cook the chicken using out Whole Roast Chicken recipe.

Step 2:

Place fish sauce, vinegar, lime juice and zest, sugar, garlic, ginger and chilli into a jug and whisk to combine.

Step 3:

In a serving bowl add all other ingredients and toss, add dressing just before serving.

Step 4:

Serve garnished with peanuts.
